Carrots can be a sweet addition to any fresh juice recipe. This root vegetable has a naturally sweet taste, balancing out the sometimes strong and potent taste of other vegetables and spices like the ginger used in this juice. Carrots are a great source of beta carotene, which is converted to vitamin A in the body. Did you know that vitamin A is essential for bone health? In addition, carrots contain antioxidants and aid in both cardiovascular and eye health.
Ginger is a warming root that has anti-inflammatory properties, can reduce symptoms of pain, and is amazing for digestive health. Ginger may even help fight against infections, and during the winter months it’s important to help support our immune systems as much as we can. I love adding ginger to juices for that extra zing of flavor.

Recipe: (serves 1)
- 3-4 carrots
- 2-3 celery stalks
- 1 inch ginger, peeled
- 1 lime, peel removed
- 3 leaves romaine leaves
Wash and prep all the ingredients, and then juice them up.
*Tip: Alternate the more firm vegetables, like carrots, with the more delicate, such as romaine leaves, when juicing. The firmer vegetables will help push the other ingredients (lime, leaves, ginger) through the juicer.
