People usually either love or hate mushrooms. But you really should love them! Mushrooms don’t get as much of the spotlight as they should, but there are so many great things to love about them. Mushrooms are great immune boosters, contain adaptogenic properties, and are full of various minerals and vitamins.
One of the vitamins found in mushrooms is vitamin D. Did you know that vitamin D isn’t actually a vitamin at all but a hormone? Getting adequate sun exposure and supplements are two great ways to increase your vitamin D levels. Food sources include salmon, sardines, tuna, eggs, and, of course, mushrooms. Vitamin D helps fight infections and could prevent many chronic diseases and some types of cancer.
What is really cool is the sun can help increase the levels of vitamin D in mushrooms. Yep! You read that right. If you let your mushrooms sunbathe for up to two days, with the gills exposed, they can produce massive amounts of vitamin D. So give this experiment a try this spring and summer season. Set those shrooms outside, gills up, and then add them to soups, salads, and homemade pizzas. Don’t be afraid to get creative!
