When our neighbors moved out this past spring, they asked us if we wanted to inherit their two beautiful hens, Audrey and Haddie. Of course we jumped at the chance!
We have been caring for these two beautiful ladies for two months now. I didn’t know that I was interested in urban farming until we began our own food garden three years ago. Since then, we have been looking into other ways to become more self-sufficient, so adopting the hens was a perfect opportunity.
Lately, we have been enjoying fresh eggs just about every morning. They’re beautiful and delicious!
I am going to let y’all in on a little secret… I used to HATE eggs! When I was younger, if I was going to eat eggs, they had to be a scrambled in a particular way–pepper, garlic and most importantly cheddar cheese! Lots of cheese!
As I grew older, I began to experiment with different variations and settled on over easy. That’s right, I went from must-be-scrambled, full-of-cheese eggs to runny! Who knew?
One of my favorite, easy and fast go-to meals these days (when I have had a long day at work) is my version of huevos rancheros. However, my man does make a mean egg, sprout and goat cheese sandwich for breakfast!
