I had some leftover pureed pumpkin from a previous recipe and decided to whip up a treat for my pup! Humans aren’t the only beings that appreciate great-tasting treats. 🙂
Lucy is a great companion while I’m in the kitchen, so I thought it was about time she got her own special treat–and she loves these pumpkin cookies! They are so easy to make, and they make great gifts for your other dog-loving friends.
- 1 cup pumpkin
- 2 tbs chia seeds (for chia paste as an egg substitute)
- 1 cup brown rice flour
- 2 cups buckwheat flour
- 3 tbsp almond butter
- 1/2 tsp cinnamon
Preheat oven to 350 degrees F. To make chia paste, mix 2 tbs chia seeds with 6 tbs warm water. Mix well and set aside to turn into a paste while you mix the other ingredients. In a small bowl, mix brown rice flour, buckwheat flour, and cinnamon. In another bowl, mix pumpkin, chia paste, and almond butter. Slowly add the flour mixture to the pumpkin mixture until fully blended. Once fully mixed, pour mixture onto a floured surface and roll out with a rolling pin. Now is the fun part! Cut the dough using cookie cutters and place on a baking sheet lined with parchment paper. Bake for 35 minutes or until golden brown. Let cool until they harden and then let your furry best friend be the taste-tester.
